Leftover Vegetable Quick Soup

Ingredients:
Any leftover vegetables
Enough water and/or milk to cover what's in the pot
Start my rough chopping any veggies about to go.

Then rough chop them and toss them in the Ninja Foodie. Fill it up with water and/or milk until it covers the veggies.
Season it however you please.
I enjoy salt, black pepper, mustard and a splash of hot sauce.
Put the pressure cooker lid on and set the timer for 20 minutes.
After letting off the pressure I like to sprinkle a little bit of cornstarch in there and mix it up...
If you have an immersion blender it's sometimes nice to puree some of the veggie chunks to create a more rich broth...
