Split Chicken Breasts and Potatoes Pressure Cooked in the Ninja Foodie XL

Ingredients:

2 - Bone-in split chicken breasts

1 Cup (small bag) baby potatoes

1 & 1/2 Cups of hot tap water

Seasoned with powdered sazon seasoning, salt and black pepper


According to my magnet, chicken breasts "should" take 8 minutes. Since I'm using very small baby potatoes, I think they'll take 4 minutes. *Sidenote: The potatos were perfect!*

So I placed the two pack of split chicken breasts in, with the ribcage down. I generously sprinkled powdered sazon seasoning and fresh ground black pepper. No salt needed, as the sazon seasoning blend had plenty.

In hindsight, I should have first, poured in my water, but lesson learned.


I poured in 1 & 1/2 Cups of HOT tap water.

After locking the pressure cooker lid in place, I set the timer for 4 minutes.


If you're familiar with the Ninja Foodie XL, and I presume the same with most pressure cookers, it takes a while for the water to come to a boil so that enough steam can build up pressure inside. It took about 4 minutes just until I heard pressure safety latch click and the timer actually begin. Had I recalled this spool up time, I would have set the timer for a single minute.

*Sidenote: The chicken was well seasoned, but a bit over, in the end.*

Then, I pulled both breasts out of the pool with a pair of silicone tongs.

Being very careful to not scratch the pot and extra careful to not tear the chicken skin! Since I was using the pressure cooking lid, for another round, I set the breasts right in the upturned lid.


Next, I dumped in the potatos and carefully placed the rack in. Finally, placed the breasts on the rack, secured the pressure cooker lid.

I set the pressure cooker for another 4 minutes.

This round, since the water was still steaming, it only took 2 minutes to spool up and the timer to start.

6 minutes later, after letting off the pressure, I was looking at two well seasoned, yet gray looking breasts. Luckily, the chicken skin was still intact and I dropped the air fryer lid. Broil setting and setting the temperature as high as it would go, 450° f, crispified the skin and provided a nice color.

Protip: I acquired a very cheap 21pc set of very cheap fun toy's which fit in the Ninja Foodie XL and several other instant pot style pressure cooker & Fryer combos. THIS single piece is a GODSEND It's basically a claw which easily plus the rack and air fryer basket out of the pot!

Needless to say, that simple took makes the entire collection worth while!


Carrying on, with the chicken set aside, time to drain the potatoes. I tasted the broth and decided to spare it from the drain. It was delicious. So, two coffee mugs went into the colinder before pouring and dumping bout the pot. It reduced to a cup and a half and after cooling, went into a Tupperware and straight into the freezer.

The end result?

Well, it was super easy, took little preparation and I have bonus stock for another treat!
